Guilt Free Banana Bread (no sugar, no grains)

This recipe makes for a delicious treat, snack or even breakfast on the go, whilst still being highly nutritious and nutrient dense.
Maybe it is for that reason that it never last very long in our house and literally disapeares off the kitchen worktop.

I won't go into detail about the health benefit of each ingredient even they all have plenty, but would like to mention one to give you an insight into why this is a guilt free Banana Bread.

Coconut Flour, is naturally gluten and wheat free and high in fibre. It is high in protein and healthy fats. These are mostly saturated fats, called medium-chain triglycerides, which digest easily, provide instant energy and are antiviral, antimicrobial and anti fungal.


Ingredients

4 ripe bananas, mashed
1/3 cup coconut oil, melted
4 eggs (organic if possible)
1 tsp Vanilla Extract
2 tsp Cinnamon
1/2 cup ground Almonds
1/2 cup Coconut Flour
14 dates, soaked in hot water and blended
1 tsp Bicarb Soda
1/4 tsp Himalayan Salt
1/2 cup dark chocolate chips

Mix all ingredients in a bowl.
Place in oiled loaf pan.(I use coconut oil) 
Bake for 45min.-60min. at 180 degree Celsius

If you can resist, let it cool before you enjoy!!
